openHealth - Apps & Devices : Incorrect default date displayed in device readings view – Always shows "Sunday, 09 February 2025"

Description
Steps to Reproduce:
- Login to the VitaGist.
- Tap on Health at the bottom navigation.
- Tap on Apps & Devices.
- Tap on Add Devices, select any device, and tap Save.
- Select the newly added device and tap on Actions.
- Tap on Add Reading.
- Fill in all required details and select the current date and time. Tap Save.
- Tap on View for the added reading.
Expected Result:
The selected (current) date and time of the reading should be displayed correctly.
Actual Result:
The date displayed is always "Sunday, 09 February 2025", regardless of the date selected during reading creation.
Note : Affects all device types.
